Fourth of July Food

I realize that I haven’t been keeping up with my Friday Food feature as faithfully as I should be. (How’d you like that alliteration?) In my defense, there has been quite a lot going on over the past few months, including those two weddings I mentioned, a trip to the beach, and all of the end of the school year craziness. Yesterday, Patrick was actually able to take the holiday off (a very RARE thing) and we spent the day at the pool and hanging out. Last night, Patrick stayed home so the baby could go to bed while I took Kendall and Berkeley to Pops in the Park where we listened on the lawn to the symphony and then watched some great fireworks.

So, to the point of my post, I thought I’d do a little belated food feature today since our fun kept me away from the computer yesterday. Who doesn’t love some good BBQ/picnic food? We’re going to some friends’ house for some Independence Day festivities and I just made some potato salad to bring. I love me some good potato salad, but who says it has to be bad for you? Not me! I of course left the skins on—not only is it prettier that way, but it adds to the nutrition of the dish! (I don’t think I’ve peeled a potato in my life—I leave them on for mashed potatoes as well.) I used a combo of Hellman’s lowfat mayo and nonfat plain yogurt for the base of the dresssing, and then added a little prepared mustard, red wine vinegar, some dill, fresh rosemary,and salt and pepper to taste. I tossed in some diced cucumber, green onion, and red bell pepper and voila-- a beautiful, tasty, and good-for-you potato salad! (And I dare anyone to guess that it is lowfat!)

i love a good tater salad. was it seriously cool enough for the girls to be under their blankets? makes me jealous! hope it's been a fabulous weekend. happy 4th.

well, it was in the low 70's, so not cool, but the girls love snuggling under blankets so i guess it was cool enough for THEM!

the potato salad looks delish! (i never peel potatoes either- easier and healthier- a win win!)

Those pictures turned out great! Glad your girls finally got to experience fireworks. I made a potato salad just like that a couple of days ago, peels and all. We must be related.

Know what else we love? Guacamole Potato Salad. Just add a couple of chopped avocados and some cilantro instead of dill and mustard. Sometimes I also put in black beans, corn, and red pepper with it--it's so yummy.

mirien-- that guacamole potato salad sounds heavenly! we'll have to try that one soon! is the avocado mashed in with the mayo or in chunks?
