Do you like cauliflower? I did. But a couple months ago, I heard about roasted cauliflower, which I had never tried before. I heard that it reformed even self-professed cauliflower haters. I had to try it. And now I LOVE cauliflower. I’ve made it three times since and now that I’ve seen the light, I don’t know if I can cook it any other way.
Just cut a head of cauliflower into bite size florets and toss with a drizzle of olive oil (I just use about a tablespoon), salt, and pepper. Bake in a preheated 450 degree oven for 20-30 minutes. Toss once to make sure it browns evenly. You want it really brown. It will look something like this:
My girls loved it, but I have to admit that I was secretly hoping that they wouldn’t want seconds so that I could eat the rest myself. No such luck.
And how gorgeous would this dish be with these amazing rainbow cauliflowers? The orange one happens to have 25 times the amount of beta-carotene! Beautiful!

I am one of those reformed cauliflower fans... I searched for months before I finally tried this and loved it! It's great with a little garlic roasted in the mix as well.
i love roasted vegetables but have never tried to roast cauliflower. thanks for the suggestion- i'll try it!
I've never tried roasted before. The garlic idea sounds really good, too. My kids love getting the fun colored ones at the farmers market even though they hardly taste different!
Yes, I loooove roasted cauliflower. Throwing some broccoli in there is fantastic too. I need to call you and talk food sometime. I think I'm going mostly vegetarian. I thought I would call you so you could tell me what a good choice I'm making!
