Friday Food #11

I love muffins but I never buy the ones at the store cuz they have like a zillion calories and buckets of fat in them. Whenever I am in the mood (okay, really I mean whenever I actually wake up early enough to make something for breakfast other than Cheerios or oatmeal) I like making muffins for breakfast. I have a few standby recipes that I love, but I also like to try out new ones when I come across them. A couple days ago I found a recipe for Cinnamon Toast Muffins that sounded yummy, so this morning instead of lying in bed until Patrick yanked me out, I actually got out of bed as soon as I woke up and went downstairs to make them. I think the girls were a little shocked to come downstairs to find me mixing something up in a bowl instead of pouring cereal out of a box. These muffins were so quick to make and all through breakfast I kept hearing, “Mom, these are so good! They’re delicious! We just love these muffins! Can I have another?”

I think next time I make them, I’ll have to double the recipe so I can freeze some for later. Patrick is finishing up the last couple that were left from this morning for his evening snack!

An update from last week’s post: I haven’t had a chance to try out my beans yet. It’s been a busy week, starting with the girls’ big dance recital last weekend and then all week I’ve been working on getting ready for the neighborhood garage sale that I’m in charge of tomorrow! The beans will just have to wait!

Hey- I am not sure if I mentioned to you but we just found out Olea is allergic to Dairy. (milk and cheese but I think eggs are ok..so far...)

So,.. now we know she is feeling much better and more regulated but now I am scrambling to find new ways to serve her similar things. Any suggestions my wonderful friend of a dietitian? :) You are a great example to me on a healthy lifestyle. Hopefully I can get on that wagon more fully through this new discovery of Oleas. Those sound amazing! I'm usually stuck in the breakfast cereal rut too, so I'll have to give these a try sometime.

Hi! Thanks for stopping by th blog. Your girls are so precious. We're actually living in the upper west side! We love it here, it's been a fun summer. Wish we had run into each other when you where here running in Central Park!
