Need a quick meal for a crazy weeknight? Can you say fa-HEE-tah?
The most time-consuming part of this recipe is chopping up the vegetables. If your evening is going to be really busy, just get everything chopped up earlier in the day and then you can pull it all out of the fridge when you’re ready to throw everything together. (Don’t slice the avocados ahead of time or they will turn brown.) The total cooking time for this recipe is about 7 minutes. You can’t even get through the drive-thru that quickly!
These fajitas are chock full of fiber, protein, vitamins A & C, B-vitamins, potassium (even more than a banana), and iron—how do you think a Happy Meal would measure up to THOSE stats? In addition to the fajitas’ beautiful resume, they taste absolutely delicious—would I be telling you about them if they didn’t?

we love these fajitas. very tasty. very easy. very satisfying. i usually put all the stuff on a salad and the rest of the family uses tortillas but either way, it's great!
This is one of my favorite recipes. I love getting it ready in the morning and being able to throw it together when we get home at the end of the day. It is even a great meal for company! Thanks for the recipe. love, j
